congee
A more budget friendly version of a classic porridge.
Ingredients:
8 cups stock
1 cup jasmine or long grain rice
2 cloves garlic
1 medium onion
3 tablespoon soy sauce
1/4 tsp red pepper flakes
1/4 tsp ginger
1 teaspoons kosher salt, plus more as needed
3 tbsp olive oil
pepper to taste
Directions
Dice your onion as small as you can get it and add to your largest pot. Then dice your garlic as small as possible and add this to your pot with all other ingredients.
cook this on medium heat covered, stirring often, for 30-35 minutes or until your rice has gone past being cooked and has begun to break up into very small pieces. the congi will take on something that more rsembles oatmeal than a rice dish.
You may need to add stock to this if it is getting too thick before the rice has fully cooked. Simply add stock 1 cup at a time until your rice is cooked. You may also add more stock if you would like a thinner texture.
remove from the heat and let the porridge cool before finishing with more salt and pepper if needed, then serve. this pot will hold its heat for quite some time so dont burn your mouth.
