Bitter Lemon Quick bread
Makes: One Loaf
Ingredients:
1 3/4 cup flour
1/4 cup oatmeal
1 1/2 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
pinch of salt
2 cups Pureed lemon scraps
1/3 cup oil
1 cup sugar
3/4 cup water
Topping:
3 tbsp sugar
3 tbsp oatmeal
1 tbsp water
A note on the scraps
Use whole lemons after you have juiced them for another recipe. Make sure all the seeds have been removed. You can collect these over time and freeze the lemons until you have enough.
Directions:
Preheat your oven to 350 degrees.
Prepare a loaf pan, or similar sized cake pan by oiling the bottom and sides of the pan then dust with flour. Make sure to shake out the excess.
if you are using frozen lemon scraps make sure to thaw them or microwave them until no longer frozen. In a food processor or blender add you lemon scraps and water and puree them on high until you have something more like apple sauce. There will be some larger bits and it wont be perfectly uniform which is okay. Just get it as smooth as you can. Add these to a bowl and set aside.
In a large bowl combine your flour, oatmeal, spices, baking soda and powder, and salt. Mix with a whisk until well combined.
To your scraps add the sugar, and oil. Mix this with a whisk until well combined.
Now pour the wet ingredients on top of the dry ingredients and mix until everything just comes together, essentially when all the flour is hydrated. Try not to over mix there will be lumps which is okay, you want to avoid building Gluten.
Pour your batter into your loaf pan. Now combine all ingredients for your topping in a bowl and mix well. Using a spoon or your fingers sprinkle the topping as evenly as you can accross the top.
place in the oven and bake until a toothpick inserted into the middle comes out clean, depending on your dish 45-50 minutes approximately.
Remove from the oven and let cool completely before trying to remove from the pan.
